*Recipe* Chicken Cauliflower Enchilada Casserole

It's been a while since I posted a recipe, and this is one of those great quick and delicious weeknight meals.  This dish could be dressed up and added to, with salsa, more salsa verde or hot sauce.  I'd like to say that it is low calorie, but I don't think that I can!   It could be a lot worse though, and it has cauliflower, so that makes it healthy right?  



Ingredients

-about 4 cups frozen cauliflower florets
-4oz cream cheese, softened
-2.5 cups cooked chicken, shredded (I used a rotisserie chicken        from Costco)
-1/2 cup Salsa Verde
-1 tsp salt
-1/2 tsp black pepper
-1 cup sharp cheddar cheese, shredded
-1/4 cup sour cream
-chopped, fresh cilantro to taste



Directions

-Put your cauliflower in a microwave safe dish and cook for about 10-12 minutes or until fork tender.  
-Add the cream cheese and microwave for another 30 seconds, Stir.
-Add the chicken, Salsa Verde, salt, pepper, cheddar cheese and sour cream.  Stir.


-Bake in preheated oven (375 degrees) in an overproof casserole dish for 20 minutes or until slightly golden and bubbly.  
--Serve hot and enjoy!

Fab Friday Faves 8.18.17

Happy Friday everyone!  I have once again been dropping the blogging ball, I just haven't been feeling it, and have been pretty tired and decently busy.  Maryland is the same, horrifically hot and humid and random downpours every couple days.  It's nice to be back with Josh and Smudge and Nicole and the baby and the crew, but I must say I'm missing Saskatchewan and Florida! It was so great to see everyone! I still haven't blogged about my trip, or anything else for that manor but that will come.  Everyone have an awesome weekend, mine is going to be jam packed, with some visitors and lots of events!


The day after I got back from Florida, we went into DC for Andy's birthday party.  Andy is my Peru BFF, Jule's husband.  We had a great time with great friends and some great food!


There is this awesome little sushi place in Prince Fredrick, a short drive from here.  It is called Nagoya and really is an awesome little gem.  Josh and I have made it a regular spot when we are out that way.


I took myself out to the Purse State Park area last week to search for fossilized shark teeth and enjoy some nature.  I went to a different area and found a ton of teeth and an even prettier beach.  


Last week was International Cat Day, so here is a picture of my little princess, being very lady-like!


Josh and I drove our friend Wilbur to the airport last weekend and stopped into Alexandria for lunch and some wandering.  We went to Don Taco for lunch, one of the best Mexican places ever and I even got real Ceviche and Churros with chocolate sauce, some of my Peruvian favorites.


I got my first Fab Fit Fun box yesterday.  It is awesome and considering I got it for $20 off, I couldn't be more impressed.  It is very similar to my mom's and I wish I could keep getting it!


I got these gorgeous sunflowers at the Farmer's Market on the weekend.  They make me think of fall, which I'm not rushing, but man, the 90's and 100% humidity are getting old!

Fab Friday Faves 8.4.17

Happy Friday everyone, and long time no talk!  I was super busy in Saskatchewan, not to mention my phone decided to completely stop working about half way through so I was using an actual CAMERA and didn't even have a phone for most of the time... what is this 2002? haha. Anyway, I am currently in Florida, and have still have had no time to really collect my thoughts, or get pictures together, so, I just threw together few things from this little trip in FL.  Everyone have a great week, and hopefully next week I can get organized and do a blog or two about my time in SK!


Anyone that has been to our house knows I hate most of the lights that came in it, so we have slowly been changing them out.  This is the newest one over the kitchen island.  It looks a million times more modern and just way better!


On another rainy day after Josh had left, I decided to give our water closet in the master bath a little character with this stick on decal from Wallpops! It looks even better than I imagined.  I just need a cool rustic shelf and some vintage accessories.


While Josh was here we decided to check out Coolside Gelato bar, about a 5 minute drive from out house.  We have had their gelato before and its delicious but we had never had their drinks.  Now that they are famous for their Beerlato we had to try one.  I actually got a Sangria in a chocolate covered glass with lemon gelato.  They are amazing.  I went myself for a Prosecco with lemon and a Pino Grigio with melon haha.

                                     
                                       

While we were out looking for lights, we came across this Wine barrel propane fire pit on an amazing end of season sale.  We love it!


 I fund this cute Pineapple glasses at Walmart and had to have one!  So cute!


I went for a walk yesterday out at John Chesnut Park and want to share some of the animals I saw.  I always see so much wildlife out here and I love this park.
