Powdered Butter Cookies

I was looking for something different and quick to make the other day, when I came across this recipe on Pinterest under a different name.  They had rave reviews and sounded fantastic, so I decided to try them.  They are Josh's new favorite and he has been asking for them since he finished the last batch!  The best was to describe them I think would be"classic vanilla cupcake meets powdered donut hole."  Seriously, delish!

Ingredients

  • 1-8oz brick of cream cheese
  • 1/2 cup butter softened
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 box yellow cake mix (this is what the original calls for, but I am sure you could use any flavor you want!  I am going to try Red Velvet next if I can find it here!)
  • 1/2 cup powdered sugar (or for the Canadians and how I prefer to say it, icing sugar)

Directions

  • Preheat oven to 350F.
  •  In a medium bowl, cream together cream cheese and butter.
  • Stir in the egg and vanilla.
  • Slowly add the cake mix until well blended.
  • Roll into 1 inch balls and then roll very well in the powdered sugar.
  • Place 1 inch apart on an ungreased cookie sheet.
  • Bake 10-12 minutes.
*UPDATE!* January 6, '14.
I used carrot cake cake mix and they came out amazing as well!  I think Josh may even like them better!
