*Recipe* Breakfast Pigs In a Blanket

Pigs in a Blanket  are a classic snack for game day and pretty much any other time, because they are delicious.  I am really picky about mine though, I don't like them with cocktail sausages, the only way I like them is with precooked sausages and Pillsbury Crescent Rolls.  I was thinking the other day about how to make them a little more exciting, and I thought of a few ways but my favorite is adding some egg and cheese and having them for breakfast!  They are super easy and quick not to mention delicious!


Ingredients

-4 large eggs or equivalent egg substitute
-1 package Precooked breakfast sausage (I used both maple flavor and regular and both are great)
-1 Pack Pillsbury Crescent Rolls or similar brand
-Cheese of your choice (slices work better than shredded)
-salt and pepper to taste
-optional-hot sauce of your choice
-optional- ketchup or maple syrup


Directions

Preheat oven to 350

Crack eggs and whisk together.
Add salt and pepper and the optional hot sauce to taste
Microwave until almost cooked and scramble lightly
Set aside


-Spray a light coating of cooking spray on cookie sheet
-Roll out and separate Crescent Rolls and place on pan
-Place as much cheese as you want on top of the rolls
-Place sausage at long end roll, it should be pretty much the same length
-Add some egg on the sausage and cheese, if you use to much they will be hard to roll
-Roll from the large end to short, being careful not to let the egg fall out
-I sprinkled the top with some pepper and crushed chili flakes as well



-Bake about 10 minutes, or until the tops are just starting to get slightly golden
-Remove from oven and serve immediately with ketchup or maple syrup for dipping
