*Recipe* Churro Cookies

Tomorrow is Cinco De Mayo, and I am totally ready for a burrito and a Margarita!  For anyone who doesn't know, Cinco de Mayo is Mexico's independence day and is always an awesome reason to celebrate.  These cookies are a spin on one of my favorite Mexican desserts, Churros. I fell in love with Churros in Peru (don't tell Mexico but I really do prefer the Peruvian variety) so I thought I would give these a try and see if they are just as good.  They are REALLY good, I wouldn't say they are super Churro like, but regardless are delicious!  Everyone enjoy your Cinco De Mayo and be safe and enjoy that Tequila!

Ingredients

Parchment paper
1 package of refrigerate pie crusts (2 crusts)
4oz cream cheese, softened 
1/4 cup sugar
1 tsp vanilla extract
1/2 cup sugar combined with 2 tbsp cinnamon
1/3 cup melted butter


Directions 

-Preheat oven to 350F
-Lay out a piece of parchment paper slightly larger than the pie crust.
-Lay out one of the pie crusts on the parchment paper.
-In a medium mixing bowl beat together cream cheese, 1/4 cup sugar and vanilla extract until smooth.



-Spread mixture on rolled out pie crust.



-Roll out second pie crust and place on top of the cream cheese mixture.


-Use a round cookie cutter, glass or biscuit cutter to cut out your cookies.  
-Gently seal the edges of the cookies with a fork.
-Use the extra dough to twist up shapes to make Churro bites.



-bake for 12-14 minutes or until golden and remove from oven. -Let cookies cool completely and brush with melted butter and coat with cinnamon sugar mixture on both sides.
