*Recipe* Autumn Root Vegetable and Lentil Salad


It is no secret that I love lentils, and I also love root vegetables.  Beets, turnips, sweet potato, radish. LovePulses on Instagram posted this recipe for a salad with all of these things that is perfect for Fall.  Sadly here it is nowhere near Fall, but I can pretend!

Ingredients

3 Tbsp Olive Oil
1 carrot, sliced
1 parsnip, sliced
1 sweet potato, diced
1 swede, diced (this means a turnip.  I didn't know either)
Salt and Pepper to taste
1 Tbsp Tahini
3 Tbsp hot water
1 cup cooked and drained lentils
1/2 cup radish, thinly sliced
1/4 cup red onion, thinly sliced
1 lemon to drizzle over top
Fresh Basil for garnish

Directions

-On an oven tray, drizzle olive oil and lay down carrot, parsnip, sweet potato and swede. 



-Season with salt and pepper and roast in oven at 380F for 25 minutes or until slightly tender.
-In a small bowl, mix tahini with hot water, salt and pepper.


-In a bowl, mix lentils with roasted veggies, radish and onion.


-Serve with Tahini and drizzle with lemon juice and fresh Basil.
