I started getting the Martha and Marley Spoon dinner delivery box a couple months ago, and one of the first recipes that came in the box was a delicious Dilly Bean salad with fresh dill and green beans. Everyone knows that I love pickles and this dish is so light and simple that I just had to try to make it on my own. I think I have it mastered and wanted to share it with all you pickled bean lovers out there!
Ingredients
-1/2 lb green beans
-2 shallots trimmed and thinly sliced
-1/4 cup red wine vinegar
-1/2 bunch fresh dill (about 1 cup)
-1 clove garlic finely chopped
-2 tsp salt
-2 tsp sugar
Directions
-Bring a large sauce pan of salted water to a boil.
-trim stem ends from beans and cut in half.
-trim ends from shallots then halve, peel and thinly slice.
-In a medium bowl, combine vinegar, whole dill, sliced shallot, garlic, sugar and salt.
-Add beans to saucepan and cook until tender crisp, about 3 minutes.
-Use slotted spoon to transfer beans to vinegar mixture and stir in 3/4 cup of cooking water and let cool.
-Use slotted spoon to transfer beans, shallots and dill to plate.
