Happy Sunday all! So Again, I am don't have too much to tell you... It has been so quiet around here since Miranda left. I have been pretty much just going on with my day to day. We finally had a sunny, non freezing day yesterday and it was amazing. The sun feels so nice! Josh and I have also booked our complete trip to Cuzco/Machu Picchu. I am insanely excited! I never thought I would get this opportunity while doing reports and reading about the Incan culture in grade school and university. I was always been very interested and captivated by the Incan culture so this is something I have dreamed about forever. We leave this coming Friday, get a couple days to explore around Cuzco, then head to Machu Picchu on Monday. Then one more day in Cuzco or to possibly hike to Huayna Picchu (the mountain that you always see in the background of Macchu Picchu photos) if weather permits. We are going at the very start of the rainy season and the forecast is for rain the entire time we are there but we are hoping we can do it! We come back to Miraflores early afternoon on the 16th, and then leave again for Maine very late that night. We will be in Maine for 11 days, then hopefully back here for only one more month!
That really is about all that is new! So I have included this amazing new cookie recipe that I tried the other day. Give them a try and you will agree! Chewy Chocolate Chunk Coconut Oatmeal Cookies
Ingredients
- 1 1/4 cup quick oats
- 1 1/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup melted coconut oil
- 3/4 cup dark brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup shredded coconut (sweetened is fine)
- 3.5 oz semi-sweet 60% chocolate, coarsely chopped (I used some leftover chocolate chips and half a random peruvian chocolate bar)
- 2 teaspoons milk
Instructions
- Preheat oven to 350 degrees F.
- In large bowl whisk together flour, oats, baking soda, and salt; set aside.
- In bowl of an electric mixer beat together melted coconut oil and brown sugar until smooth. Add in egg, milk and vanilla; beat again for 2 minutes or until smooth.
- Add in flour & oat mixture to the wet ingredients; mixing until well combined. Slowly add in coconut and chocolate chunks.
- Drop dough with cookie scoop or by large rounded tablespoons onto ungreased cookie sheet. Bake 9-11 minutes or until edges just being to turn a golden brown. Do not over bake; we don’t want crispy cookies! Remove from oven and let cool a few minutes on baking sheet. Transfer to wire rack to finish cooling. Makes 2 dozen.
