Yet another delicious recipe that I found floating around in Facebook universe. They are basically yummy vanilla cupcakes with chocolate chips and then M&M peanut butter cookie dough scooped on top. Yah, can't go wrong, and I have already had rave reviews. These are delicious and I very full or sugar so should probably be a special treat, but totally worth it!
Ingredients
Cupcakes
1/4 butter, softened
1/2 cup creamy peanut butter
1 cup sugar
2 whole eggs
2 tsp vanilla extract
1 1/2 cups flour
1 1/4 baking powder
1/3 cup milk
1 cup chocolate chips of your choice
Cookie Dough topping
8oz cream cheese (regular fat only)
1/2 cup butter softened
1/2 cup creamy peanut butter
1-2 cup powdered sugar
3 tbsp brown sugar
3 tbsp flour
1tsp vanilla
1 cup oats
3/4 bag mini M&Ms
3/4 cup chocolate chips
Directions
-Preheat oven to 350.
-Use stand or hand mixer to beat together all cupcake ingredients except chocolate chips.
-Stir in the chocolate chips.
-Fill cupcake liners 2/3 full of batter.
-Bake 20 minutes or until toothpick comes out clean. Cool on wire rack.
-In the meantime, use a mixer to beat together cream cheese, butter and peanut butter for cookie dough topping until smooth.
-Mix in brown sugar, flour, vanilla and oats.
-Mix in powdered sugar 1 cup at a time (I ended up using about 1 and 3/4 cup).
-Add in the M&Ms and chocolate chips and mix.
-Make sure cupcakes are completely cooled and use a spoon to scoop cookie dough on to the top of the cupcakes.
